I would also add to that list the jungles of "Metal Gear Solid 3: Snake Eater". That game didn't really feature any wide, stunning vistas, but the sheer density in the rainforest environment and varried terrain made for one of the most all-encompasing experiences I've had in gaming. It's about as close as anything I've played that captures the true potential of immersive game design.

I've heard a lot of good things about MGS3's environments, but I've been Playstationless for so long that I haven't had a chance to play it. I will have to pick it up when I get a chance.
